Potato Soup













  • 7 or 8 potatoes (depending on size), peeled and cubed
  • 1 large carrot, diced
  • 1 large onion, diced
  • 1 c. chopped celery
  • 3 c. water
  • 1 c. milk
  • 1 T. butter
  • salt and pepper to taste

Boil vegetables until tender and gently mash some of the potato until soup is thick and creamy.  Add milk and butter, and salt and pepper to taste.
